Building on a good foundation: Sombrero’s Mexican Restaurant announces future location in Walker with ground-breaking ceremony

WALKER, La. — Sombrero’s Mexican Restaurant in Walker has been a staple of the area’s local dining scene for over 19 years. However, as the Walker area continues to expand, plans for a new location are necessary to fulfill Sombrero’s promise of quality customer service and availability.

On April 28, 2026, employees, business owners, and political figures gathered for a groundbreaking ceremony for the newest iteration of Sombrero’s. Located behind the Walker McDonald’s, the new facility will be set up right next door to Pickleball Kingdom, which opened its own doors just recently, back in February. Come next year, people finishing up their rigorous pickleball matches will be able to simply exit the building and walk right over for some fine food and drinks at Sombrero’s.

Construction for the new building is set to begin on May 18, with a tentative completion date of February 2027, provided weather conditions don’t cause setbacks. McLin Construction, LLC, will spearhead the erection of the building and handle on-site construction.

Parish President Randy Delatte, Walker Mayor Jimmy Watson, several members of the local Sheriff’s Office, and other high-ranking individuals and business owners were present for the ceremony, each with a golden shovel in hand to officially “break the ground” and celebrate the beginning of Sombrero’s newest era.

Tommy Stojak, owner of Sombrero’s, expressed that his love of cooking in childhood inspired him to become a restaurant owner, and that love has expanded into a fondness for the area his restaurant is located in and the community that surrounds it.

“People have asked us before to go to Juban,” Stojak said, “but we started in Walker, and we will stay in Walker.”

“Everybody talks about what Tommy does for the community,” April Wehrs, president of the Livingston Parish Chamber of Commerce, added. “In times of need, and good times and bad times, and all of it. It’s a true example of a great business and the way a great business integrates with their community.”

“I’m not surprised at all that Tommy is expanding, especially in the city of Walker,” Delatte noted.

Following the ceremony, attendees were encouraged to pick up a complimentary pink, purple, or black Sombrero’s “Let’s Fiesta!” shirt and sample a few of the fried finger foods available, such as Sombrero’s famous Southwest egg rolls.
